Instructions

  • Melt the butter in a large pot or Dutch oven over medium heat.
  • Cook until the sausage is browned, breaking it up with a wooden spoon as it cooks.
  • Cook, stirring frequently, until the onion is translucent, about 5 minutes.
  • Cook for 1 minute after adding the flour.
  • Add the chicken broth gradually, stirring constantly to prevent lumps.
  • Bring the potatoes and corn to a boil.
  • Reduce the heat to low and cook for 15 minutes, or until the potatoes are tender.
  • Heat through the heavy cream, salt, and black pepper.
  • Serve immediately with the parsley.
