Octopus and Spinach Soup Recipe

  • Cook Time: 1 hour, 5 minutes
  • Total Time: 1 hour, 35 minutes

Instructions

  • Soak the octopus for 30 minutes in cold water.
  • A large pot of salted water should be brought to a boil.
  • Cook for 45 minutes after adding the octopus.
  • Cut into small pieces after draining.
  • In a large pot over medium heat, heat the olive oil.
  • Cook until the onion and garlic are soft.
  • Simmer the white wine until it has been reduced by half.
  • Bring the chicken broth and octopus to a boil.
  • Simmer for 20 minutes on low heat.
  • Cook until the spinach is wilted.
  • Season to taste with salt and pepper.
