Instructions

  • Melt butter and olive oil in a large pot over medium heat.
  • Cook until the onions are caramelized, stirring occasionally, for about 30 minutes.
  • Cook for another 2 minutes after adding the garlic.
  • Bring the beef broth, red wine, thyme, and bay leaf to a boil.
  • Reduce the heat to low and leave for 30 minutes.
  • Preheat the oven to broil.
  • Broil baguette slices until lightly toasted on a baking sheet.
  • Ladle soup into oven-safe bowls and top with 1-2 slices baguette.
  • Broil the bread until the Gruyere cheese is melted and bubbly, about 2-3 minutes.
