Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Cook until the onion and garlic are softened, about 5 minutes.
  • Cook for another 5 minutes after adding the carrots, celery, and red bell pepper.
  • Combine crushed tomatoes, vegetable broth, oregano, basil, salt, and black pepper in a mixing bowl.
