Pea and Broccoli Soup Recipe

This simple pea and broccoli soup is a nutritious and filling way to get your daily vegetables. It's ideal for a quick weeknight dinner and can be made vegan by leaving out the optional heavy cream.

  • Cook Time: 25 minutes
  • Total Time: 35 minutes

Instructions

  • In a large pot over medium heat, heat the olive oil.
  • Cook until the onion and garlic are softened.
  • Pour in the peas, broccoli, and vegetable broth.
  • Bring to a boil, then reduce to a low heat and continue to cook for 15-20 minutes, or until the vegetables are tender.
  • Puree the soup with an immersion blender or in a blender until smooth.
  • Season to taste with salt and pepper.
  • If using, heat through before serving by stirring in the heavy cream.
