Shrimp and Vegetable Soup Recipe

Instructions

  • In a large pot over medium heat, heat the olive oil.
  • Sauté the onion and garlic for 3-4 minutes, or until the onion is soft.
  • Stir in the cumin, smoked paprika, oregano, and chili powder to combine.
  • Combine the diced tomatoes with their juices, chicken broth, carrots, zucchini, and yellow squash in a large mixing bowl.
  • Bring the soup to a boil, then reduce to a low heat and cook for 10-15 minutes, or until the vegetables are tender.
  • Cook for 3-5 minutes, or until the shrimp are pink and cooked through, before adding the cilantro.
  • Season the soup to taste with salt and black pepper.
